Foraging and hedgerow wine making with Kirk Barker

If you’ve ever grown your own tomatoes or enjoyed a slice of home baked bread, you’ve no doubt experienced the immense satisfaction that comes with providing for yourself. When we forage for food, we take this experience one step further by fostering our connection with nature and reawakening that hunter-gatherer that lingers somewhere deep in all of our DNA.
Once you start foraging, you’ll swiftly find that what was once a green wall of miscellaneous foliage suddenly takes on an exciting new dimension. Every walk or country stroll soon becomes an opportunity to search for wild snacks and keen foragers will always have a spare carrier bag in their jacket pocket just incase they happen upon a laden blackberry bush or wild damson tree.
With this introduction to foraging and hedgerow wine making, the initial aim will be to equip you with a few basic techniques so that you can safely and confidently identify a manageable handful of wild edible plants. We’ll begin with a plant ID walk around Nettlecombe estate where we’ll take the opportunity to slow down, take a breath of fresh air and see what’s growing around us.
Taking our harvest back to the workshop, we’ll spend the afternoon finding out more about fermentation and how we can begin turning water (and a few other ingredients) into wine! We’ll talk about equipment, ingredients, hygiene and how to prevent most of the things that can go wrong when brewing up your own booze. In the evening, we’ll set up around the fire to share dinner, stories and of course a few glasses of hedgerow wine.
